Brownie Oatmeal Cookies

I got the idea for this after googling around for cake mix cookie recipes and finding a few that used oatmeal. Of course, we don't have cake mix in the house, but we do have a shelf full of brownie mix that my sister bought a while ago for a bake sale. The texture of the brownie mix works wonderfully for cookies, and the oatmeal gives it some body and chewiness, and also an excuse to eat these for breakfast. And the best part, of course, is that they take about five minutes to mix up.

All you need are 2 eggs, 1 stick butter, 1 cup oatmeal, and a box of brownie mix.

Melt the butter. If you live in the 21st century, you can do this in the microwave.

Stir together the oatmeal and brownie mix.

Then add the eggs and melted butter.

And mix it all up!

Drop spoonfulls onto a greased cookie sheet, then bake at 375 for 8-10 minutes. You could use an ungreased cookie sheet, but by the time you pry the cookies off you'll just have a pile of crumbs. Not that I'm speaking from experience or anything.

Let them cool, but not for too long. They're tastiest when they're warm.

And they are indeed very good for breakfast, with a nice cup of coffee.

  2. I was looking for a recipe that was quick, easy and that I had all the ingredients for. This was it!! I made these cookies and they turned out great! I will definitely make them again!

  4. Just tried it but added crushed walnuts to one batch and walnuts and choc chips into a second batch, ABSOLUTELY SUPERB cookies, a perfect 10.

    P.S.: Use non-stick spray to save yourself major hassles, they are sticky little suckers but well worth the effort.

  5. i love these cookies! i brought them to a party and no one could get enough of them. i took a tip from another recipe and rolled the dough in powdered sugar before dropping them on a greased cookie sheet and i think they were prettier (and possibly easier to get off the pan than without it).
